(This is a Strawberry Daiquiri cheesecake I made...I'll have to figure out the recipe, though, since I combined 2 or 3 different ones...)


HOMEMADE FRENCH BREAD












OATMEAL CAKE
(A family favorite, especially of Grandma Jo's)


Combine:
1/2 c. butter, cut in pieces
1 c. quick oats
1 1/2 c. boiling water
Let stand for 20 minutes. Add and mix:
1 c. brown sugar
1 c. white sugar
2 eggs

Then add:
1 1/2 c. flour
1 t. soda
1 t. nutmeg
1 t. cinnamon
1/2 t. salt
Lastly, add 1 t. vanilla
Put in 9x12 pan and bake at 350 degrees for 30 minutes.

Frosting
1/2 c. plus 2 heaping T. brown sugar
6 T. butter
4 T. canned milk
1 c. coconut
1 c. nuts

Melt first 3 ingredients over low heat, then add coconut
and nuts. Spread on hot cake and put under broiler until
browned.


BREAKFAST CASSEROLE

Bread slices 1/2 t. dry mustard
2 lb. sausage or bacon 2 c. milk
1/2 lb. grated cheese Salt and pepper
6 eggs, beaten

Cover bottom of 9 x 13-inch pan with bread. Spread cheese and cooked meat on bread. Mix remaining ingredients and pour over bread. Set in refrigerator 12-24 hours. Bake at 350 degrees for 45 minutes.

GRANDMA JO'S ENCHILADAS

1 1/2 lbs. ground beef 1 t. salt
1/2 c. chopped onion 1/4 t. pepper
12 corn tortillas

1 15 1/2 oz. can refried beans (optional –I usually serve these as a side dish, because I don’t like refried beans in beef enchiladas.)

Cook beef and onion until browned and tender; drain. Stir in beans (optional), salt and pepper. In another skillet, heat 1 cup oil. Quickly dip tortillas in hot oil just until softened. Place 1/3 c. meat mixture on each tortilla. Top with chopped tomatoes, if desired, and roll tightly. Place seam side down in 13x9x2 baking dish.

ENCHILADA SAUCE

4 T. butter 1/4 c. flour
1/2 t. salt 1/4 t. paprika
1 10 oz. can enchilada sauce 2 c. milk

(Optional: sliced olives, hot sauce)

Melt butter; stir in flour, salt and paprika. Add milk and enchilada sauce. Cook and stir until boiling. Boil 1 minute. Stir in optional, remaining ingredients (olives, hot sauce). Pour over tortillas and top with shredded cheese. Bake at 350 degrees for 30 minutes. (Extra, uncooked enchiladas can be covered and frozen. To cook, take from freezer, cover with foil and put into 400 degree oven for 20-30 minutes.)

ENCHILADA CASSEROLE (Shauna’s easier version)
Instead of filling and rolling up each tortilla, line bottom of 13x9x2 inch pan with 6 of the softened tortillas, then cover with 1/2 of the meat mixture. Layer the remaining 6 tortillas next, topping with the last 1/2 of the meat mixture. (Or, after lining the bottom of the pan with the first 6 tortillas, cover with all the meat mixture, then layer the remaining 6 tortillas on top.) Cover with the enchilada sauce and shredded cheese, then bake as directed.

"NOODLY STUFF" ~ Passed on from Great-Grandma Grace
1 large onion (chopped)
2 lb ground beef
1 pkg spiral noodles (cooked)
1 can cream corn
2 can tomato soup
olives (optional)
bell pepper (optional)

Brown beef and onions, add tomato soup, olives, bell peppers.
Layer noodles, corn, beef mixture...beef last. Top with parmesan cheese and whatever, or shredded cheddar.

Bake 350 for 30-40 min. until heated through.


WORLD'S BEST MONSTER COOKIES

Ingredients (Makes 4 Dozen)
  • 1 1/2 tsp vanilla
  • 3 cups chunky peanut butter
  • 1 1/2 tsp maple syrup
  • 1 cup softened margarine
  • 6 eggs
  • 2 cups sugar
  • 2 cups brown sugar
  • 2 cups flour
  • 4 tsp baking soda
  • 2 3/4 cup oatmeal
  • 2 cups M&M's
  • 2 cups chocolate chips
Steps
  1. Preheat oven to 350*.
  2. Get out your biggest bowl. You'll need it once you get to the oatmeal step.
  3. Combine and mix well vanilla, chunky peanut butter, maple syrup, margarine and eggs.
  4. Add sugar and brown sugar and mix well.
  5. Add flour and baking soda (mix together first).
  6. Add oatmeal and mix well.
  7. Stir in M&M's and chocolate chips.
  8. Drop by 1/4 cupfuls onto greased cookie sheet (don't put too close together, they spread out).
  9. Bake 10-12 minutes or until golden brown on edges.

MILLION DOLLAR SPAGHETTI CASSEROLE—The Suzie Makeover (that's me!) Way!
 Ingredients~ 
  • 16 oz spaghetti noodles (I use Dreamfield's rotini)
  • 2 lb jar of marinara sauce
  • 1 lb ground beef (I add 1 lb. Italian sausage)
  • 1/2 cup chopped onion
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup cottage cheese
  • 2/3 cup Parmesan cheese
  • Italian seasoning
  • 2 cups shredded cheese ( I use cheddar/colby blend)
  • Butter
Instructions
  1. Preheat oven to 350 degrees. Grease 9X13 pan or two 8X8 pans.
  2. Boil noodles according to package, drain and stir with a drizzle of olive oil so they don't stick together.
  3. In a stand mixer combine cream cheese, cottage cheese, and sour cream. Mix well and set aside.
  4. Brown ground beef and onion until no longer pink. Drain. Add in jar of marinara sauce and stir.
  5. Begin by adding a few pats of butter to the bottom of the baking dish, then layering half of the noodles in the bottom of your greased pan.
  6. Top with 2/3 cup shredded parmesan cheese and Italian seasoning.
  7. Layer on the cream cheese mixture.
  8. Top with remaining noodles.
  9. Add a few more pats of butter on top of noodles.
  10. Spread marinara sauce with ground beef over top.
  11. Bake for 30 minutes then sprinkle with 2 cups cheese and return to oven for another 15 minutes.
  12. Let cook for 15 minutes before slicing and serving.
  13. Enjoy!
  14. *If you want to freeze this, double wrap the casserole in heavy duty foil with instructions written on top. Thaw overnight in fridge and top with cheese the last 15 minutes as directed.
